Faux pesto pasta.

So this recipe is something I usually create when I want something light for lunch or don’t have time to cook some protein. My favorite part about this meal is that it takes a total of 15 minutes to make and so versatile. The pesto is creamy and bright with color from the basil and lemon juice and is so easy to make at home! (You can also add the pesto on grilled chicken, topped with tomatoes for some roma chicken…hmmmm)

1 cup of basil

1/2 lemon juice

1/3 olive oil

1/2 cashews

Salt and pepper

1 zucchini spiralized

Coconut spray (to sauté zucchini)

Handful of Cherry tomatoes

Preheat oven at 350 in the meantime

Throw first 5 ingredients in a food processor and blend until smooth and creamy

Coat tomatoes in some EVOO and put in oven for about 15 minutes

Then lightly sautee the zucchini for about 5 minutes if you don’t want to eat it raw

Place zoodles in a bowl and mix in the pesto , top with roasted tomatoes and voila! Delish vegan/paleo meal for when you have that pasta itch but also want to wear that crop top on Friday.
