This vaca frita taco tastes as good as it looks. Vaca frita is basically a flank steak that is boiled with veggies and then shredded and fried up to a crisp. I decided to give this traditional Cuban dish some Mexican loving and make it into a taco. The night before, I pickled some radishes to add some color and tang to the dish. Enjoy homies.
What you need:
1 pound flank steak
1 yellow pepper
1 white onion
1 bay leaf
Salt and pepper
Cilantro for garnish
What to do:
1. Boil flank steak for an hour with the
onion, bay leaf and yellow peppers in a pot full of water.
2. Transfer steak to a cutting board and season with salt and pepper if necessary, then shred beef.
3. Heat a pan on high with some olive oil and add the shredded beef until it becomes fragrant (up to 6 minutes)
4. Assemble taco with the vaca frita, pickled radishes, raw diced onions. Garnish with cilantro (Avocado is optional)
